3. Traditional Maturation Methods
We use traditional maturation methods to mature our beef and lamb for 21 days. As a result the meat is incredibly tender with a well-developed rounded and rich flavour.

Our West of Ireland lamb gathers its fantastic taste from the rugged landscapes where it is reared. The lamb is typically 14-20 weeks of age, grazed outdoors on a grass-based diet giving it a unique muscle texture and eating quality. Seasoned by the elements, these sheep live on a rich diet of grass and herbs which give it a distinctive flavour. Choose from our selection of gourmet lamb steaks, traditional roasting joints or slow-cook lamb cuts.
Our pork is sourced from a select group of producers in South-East Ireland; in fact our pigs are born and reared on “Fenor Farms” in Waterford. Choose from a selection of tasty favourites including pork fillet, pork loin chops, loin roast or the retro classic pork belly.
