Now, 10,000 events later, Fare to Remember is celebrating a decade of creative food design and event success.
The company’s growth stems from its creative menus, personalized and tailored service, and from satisfied clients coming back repeatedly for future events. Fare to Remember adapts to any request and can create a menu as sophisticated and elaborate as the client desires, including small intimate dinners, weddings, bar mitzvahs, cocktail receptions, corporate events and holiday parties.
To keep clients coming back, Fare to Remember is consistently coming up with new ideas, many of which respond to changing social trends as well as food trends. Currently, “fun food,” as Davidoff calls it, is the growing trend in south Florida, along with low fat menus (for adults and children), gluten-free and organic foods. Dubbed the Bar Mitzvah Queen, Davidoff has catered a gluten-free bar mitzvah, and also is proud to say she once baked a lactose free wedding cake.
“When people hire a caterer, they want their guests to completely enjoy themselves,” Davidoff said. “We provide all of our clients with a worry free experience – even those with major food allergies or dietary concerns.”
In the fall of 2008, the company was selected as the anchor caterer for Temple Beth Am in Pinecrest, as part of a competitive selection process. As anchor caterer, Fare to Remember now handles catering for all Temple-sponsored events during weekdays and is a choice of two caterers for weekend events, including weddings and bar mitzvahs. As Temple Beth Am is one of the largest reform congregations in the Jewish community in South Florida, this selection recognizes Fare to Remember as a staple in Miami’s catering community.
Under the direction of Executive Chef Hendrik Cornelissen, Fare to Remember employs 15 kitchen staff, plus wait staff, bartenders, event coordinators and caters events from 10 to 2,500 people. Cornelissen is known for his creative plate design and artistic presentation. This is evident in his numerous awards, including Money Magazine’s Best Brunch Award and Gourmet Magazine’s Most Romantic Dining Award. A native of Denmark, Conelissen is an honors graduate of the California Culinary Academy and the Le Cordon Bleu (San Francisco campus.)
Davidoff herself participated in the American Culinary Federation’s Chef/Apprentice program as an apprentice at the Fountainebleau Hotel on Miami Beach and is a graduate of the Culinary Institute of America. Fare to Remember holds the distinction of being named a Business of the Year by the South Florida Business Journal and winning the prestigious Diamond Award for Excellence from the Coral Gables Chamber of Commerce.
A new addition to the company is Davidoff’s husband, David Goodman. With a background in lighting design and photography, he has taken Fare to Remember to the next level in event management – the company now provides event services such as decorations, invitations, entertainment and music.
Since starting her company, Davidoff has concentrated on giving back to the community. Along with her employees, she volunteers and donates food to WLRN Public Radio’s many community activities and fund drives. In 2003, Fare to Remember was named “Food Donor of the Year” for their ongoing support and generous contributions feeding volunteers and contributors at WLRN’s yearlong events. Additionally, she supports Susan G. Komen for the Cure, the University of Miami’s Sylvester Cancer Center and the Children’s Home Society.
Now entering its tenth year, Davidoff is proud that through Fare to Remember Creative Catering, she has established a reputation for making someone’s event not only enjoyable, but also memorable. To Davidoff, food is more than something to eat, to her “food is the heart and soul of entertaining.”
