New students to the school begin with the Foundation Certificate Program. This eight week course was specifically designed by school founder Keith Wallace. In these classes, students learn the thumbprints of major red and white wine grape varieties; sensory evaluation and the science of taste are emphasized; and, importantly, many wine myths are brought to light and discussed. Students who take this course often out-score sommeliers and other wine professionals in a final blind tasting exam.
The Certificate of Global Wine Studies is an intensive exploration into the world of wine. Students are immersed into the viticulture, economy, geology and history of every major wine area. Old World countries such as France, Italy, Germany and Spain are as thoroughly traversed as the New World regions of California, South America, South Africa and Australia. The breadth of this learning leaves students with a broad sense of many wine styles, a comprehensive knowledge of wine history, and a forward-thinking view of the world of wine.
Taking the Foundation and Global Wine Studies Programs together has proven the most effective means in which to attain a thorough wine education. Students who do well are encouraged to work towards earning the school's Diploma Oenotropae and continue on in the Advanced Wine Studies Program.
