Just next to the caviar, duck confit, and lobster, Costco members can now buy the authentic, luxurious, acorn-finished Ibérico de bellota ham from Spain. Ibérico de bellota ham is the pride of Spain’s culinary culture and is recognized worldwide as a treasure akin to white truffle, foie gras, and caviar. In addition to its flavor and culinary value, it is very healthy since its fat contains mostly oleic, non-saturated fats and acids. Brought to Costco by the Chicago-based importer Solex Partners, Ibérico de bellota is available in Costco’s deli section as a 4oz pre-sliced package, found in 12 selected stores in the Midwest.
Costco is well known for its unique gourmet treasures, in particular its award-winning wine collection. Nevertheless, many were surprised to hear that the Ibérico de bellota found a home in such a large warehouse retailer like Costco. This was made possible by Bill Hanson (VP Costco Midwest), who has a passion for the fine foods of Spain. He and his team were willing to go the long road inherent in acquiring such a unique artisanal product in order to offer it to Costco club members.
After more than a decade of hard work, the Spanish Ibérico ham producer Embutidos Fermín was granted USDA approval for export to the USA. Known as a dynamic team with a true Spanish soul, Fermín has selected Solex Partners to represent and distribute the Fermín Ibérico ham. Solex delivered the first Ibérico de bellota hams to its high-end restaurants and gourmet stores almost 1 year ago. Back then, it was only available as a whole leg ham; it took many months to find a slicing partner that is able to handle such a delicate product (that sells in gourmet stores usually around $160/lb). Luckily, a slicing partner was found, which enables Costco to package this ham with maximum convenience for its members.
