Jayson Brown: We first started hosting the Hearst Green Market at the cafe57 entrance in June 2007, the spring after the building opened, and it’s been a big hit ever since!

Brown: cafe57 Receiver Shalifou Konate and I go to Union Square Market every Wednesday morning (in peak produce season) to select delicious and interesting product for the Green Market, and they bring the produce back to Hearst Tower for sale at lunch. cafe57 Marketing Manager Brad Bankos and our team of cashiers portion the produce for sale, and set up tables and signage. It’s a full team effort!

Brown: Seasonal items are high priority. We also take into account how well the produce travels we realize people have to transport their purchases home, so we try not to select anything overly delicate. Fruit is always very popular, and heirloom tomatoes and trendier items like kale move quickly. We always try to have some chef-driven items that the home cook might not buy on their own last season we had ramps for several weeks. Employee requests are always taken into consideration.

Brown: We purchase from Union Square Green Market, specifically farms from the Hudson Valley, Catskills, Southern New Jersey and Pennsylvania.
