La Gringa Taqueria introduces blue corn tortilla to their menu options, one of the first in New York to offer a healthy alternative to the traditional Tex-Mex meal for their customers.
La Gringa Taqueria’s continues to take their menu to new heights by incorporating the blue corn tortilla, another great addition to their already fresh, healthy, and sustainable menu that is eco-friendly, Vegan friendly, and they can now add gluten free friendly to that list. Health studies show that the blue corn provides 20% more protein and is gluten free compared to the yellow corn, and naturally has a sweeter taste. It has also been suggested by Dr. Michael R. Peluso from Live Healthy, that blue corn may have anti-inflammatory activity, cancer preventative properties, and may also help to control body weight.
The blue corn tortillas are handmade at a local Taqueria and shipped in fresh daily. La Gringa Taqueria is known to have ingredients shipped on a day-to-day basis and menu options such as guacamole, pica de gallo and sauces prepared fresh multiple times a day. With a strong focus on cooking healthier, La Gringa Taqueria also prepares their handmade chips by flash frying the taco tortilla’s to reduce the amount of oil that is released.
As La Gringa Taqueria continues to grow with plans to expand in the SOHO area late summer of 2014, expect more healthy alternatives to the traditional Tex-Mex Taqueria to compliment their unique intermix of Caribbean flare to their brand.

Henry Fernandez and Adalis Velez opened La Gringa Taqueria in 2012 (lagringabk.com), located on 800 Grand Ave, Brooklyn with a twist to traditional Tex-Mex by adding their own signature style from their roots of Caribbean ingredients that are delivered fresh daily and hold up to the eatery’s motto of serving fresh, healthy and sustainable food, along with being Vegan and Eco friendly. La Gringa Taqueria is planning to expand to the New York City area in the summer of 2014. Henry Fernandez is also owner of Simply Fondue located in Queens, NY.
