Kitchen 580 presents innovative culinary concoctions of hand picked items from around the world that are flown in daily. The ingredients include ahi tuna from Hawaii, parmigiano from Italy, and various spices from Thailand, Vietnam, Korea, and Japan, to name a few. The steaks offered at Kitchen 580 are Japanese Wagyu beef and carefully cooked in a specialized 2500 degree infrared oven. The entire seafood and produce selection is organic, as well as sustainable. In addition, the dishes created are highly flavorful without a trace of MSG.
Applying his expansive knowledge in the culinary business, executive chef Jess Ledesma was invited to lead the team at Kitchen 580. Ledesma’s expertise in Pacific Rim cuisine originated with his education and background from Hawaii and the regional cuisine in the 90’s. Having traveled and worked in various parts of Asia including Korea and Japan, among other locations, Ledesma expanded his culinary capabilities, catering towards international flavors and cuisines. Locally, Ledesma has worked at prestigious hotels such as the Waldorf Astoria in New York City and the Half Moon Bay at the Ritz Carlton. With solid experience, Ledesma opened his first restaurant, Forbesmill Steakhouse, located in Los Gatos, California and served as a professional culinary instructor at The French Culinary Institute in Campbell, California. He expanded his ventures through the creation of KOA Restaurant Group, which assisted in the development processes of restaurant conception, design, and execution.
