Dr Joe Krebs, the Director of Protein Chemistry & Engineering at Bioo Scientific, will give a keynote lecture describing his research on sequential injection analysis of melamine in food samples at the upcoming AOAC Pacific Northwest Section Annual Meeting this week.

Melamine is an inexpensive industrial chemical which is sometimes illegally added to milk and other food products to increase their apparent protein content. Under some conditions ingestion of melamine can cause acute kidney failure, leading to illness and sometimes death.

To counteract this problem, Bioo Scientific developed a unique high-throughput enzyme assay to detect melamine in milk and other food samples. This method uses melamine deaminase which converts melamine to ammonia. This technology is currently available in a convenient 96-well plate format in the MaxSignal® Melamine Enzymatic Assay Kit. To improve the sensitivity of this assay, Bioo Scientific is converting this existing format to a sequential injection format.

Sequential injection assays are very rugged and efficient, making them an ideal platform for food analysis, including melamine and ammonia detection in food. In addition, the exquisite selectivity of the technology permits great simplification of the sample preparation procedures, greatly enhancing the throughput of the assay.

This research is being funded by an USDA SBIR grant.
