Promolux Lighting International joined food safety professionals and other food industry suppliers this week at the increasingly popular 2006 Food Safety Summit in Las Vegas, Nevada.

Promolux calls attention to the importance of using correct specialty lighting for food safe merchandising. Participating in the 2006 Food Safe Summit helps Promolux raise awareness of food safety issues among retailers and merchandisers. Promolux is well known for its balanced spectrum lighting for fresh and refrigerated food displays and cites numerous studies conducted in university labs and food research centers that show poor lighting to be one of the causes of food damage.

“Few North American organizations are yet making the connection between food safety and appropriate lighting,” says Promolux representative Jamie Orr, “although most retailers of fresh foods in Europe have already switched to color corrected lighting for food displays.” However, interest in the Food Safety Summit is evidence of a growing awareness across North America about food safety issues generally.

Participants shared practical food safety information. Promolux advises that the first warnings of food deterioration are not only visible changes in color and texture: alterations in food odor and taste are indicators of changes that could become health risks if ignored. Commonly used food display case lighting produces food surface warming in perishable foods. UV emissions cause dangerous greening of potatoes, and photo oxidation degrades meat quality and causes rancid flavors in fat containing foods.

The surface of fresh seafood needs to be warmed by only a few degrees to set the stage for exponential bacterial growth that renders it dangerous for consumption. All foods contain bacteria that are safe in small quantities but highly unsafe when out of control, especially in pastry and sandwich fillings.
