Walter Staib has celebrated many milestones at the helm of City Tavern. This year, while toasting to the birth of our nation on Independence Day, he will also commemorate entering into his 15th anniversary as Chef/Proprietor of the historic restaurant.
In an industry where 15 years can be considered an eternity, Staib will celebrate this culinary achievement with pride, as the journey has been far from easy. Despite the inevitable setbacks, he has managed to pen three successful cookbooks and accumulate numerous industry accolades. However, Staib says through everything he’s remained committed to successfully executing the mission he mapped out in 1994.
“I continue to welcome guests from throughout the world to City Tavern and deliver a unique interpretive dining experience. It is a piece of history, a living culinary museum where 18th century history comes alive through ambience and cuisine,” said Staib.
In 1994, Walter Staib won Congressional approval as operator of the Tavern, which re-opened for business on July 4th featuring 18th century style gourmet cuisine. Since that time he has been named Culinary Ambassador to both the City of Philadelphia and the Commonwealth of Pennsylvania, and honored with the Restaurateur of Distinction Award presented by Restaurants & Institutions Magazine which initiated City Tavern into the prestigious Ivy Society. City Tavern was named Food Network’s Best Historic Restaurant in 2000, the same year it was awarded Restaurant Hospitality’s Best Kid’s Menu in America Recently, Staib and City Tavern received the prestigious Seven Stars & Stripes Award for excellence in gastronomy and hospitality. Both the chef and restaurant are featured regularly on numerous local and national culinary/travel programs. Staib hosts “World Cuisine of the Black Forest” which airs every Sunday at 5:30pm on CN8 and is often cooking colonial dishes on “The Chef’s Kitchen” weekdays also on CN8.
