• Barry Callebaut launches Power Flowers™ as the most user friendly and qualitative way to color macaroons at the Sirha Trade fair (Lyon 24-28 January, Booth 4F04);
• IBC developed with Power Flowers™ a fantastic color palette for macaroons while complying with EU legislation;
• Power Flowers™ guarantee the same result each and every time.
At the occasion of the Sirha trade fair, Barry Callebaut’s IBC brand, specialized in color and printing technology for food applications, presents the first coloring revolution for macaroons, in accordance with European legislation on food additives (EC) N° 13333/2008. The Power Flowers™ assortment is solely made from tempered cocoa butter and 40% coloring agents and is available in the three primary colors (red, yellow and blue) and white. By simply combining the different Power Flowers™, chefs can create the exact color they desire, time after time.
Endless creations within regulations
Thanks to the support of Barry Callebaut, customers can achieve the most creative results while staying compliant with all EU regulatory rules. IBC has already developed the formula for a full color palette of 13 popular macaroon colors. This set is fully compliant with the current and new upcoming European legislation on food additives.
Saving time and waste
The new technique enables chefs to start coloring immediately. Power Flowers™ are easy to use and can be measured with more precision than liquid and powder colorants: simply cut off and add pieces of different colored Power Flowers™ to reach the desired color or tone in only a matter of seconds. And because the coloring agent (powder) is contained in the Power Flowers™, there will be no powder floating around while coloring, ensuring an absolute spotless kitchen that serves as the ideal background for every chef’s creativity.
Colors from nature
There is an increasing interest in the use of food dyes that stem from natural origin. IBC reacts to this trend by introducing two brand new dyes: blue spiruline and beetroot red. Together with the already existing primary colors, chefs can create nice blue, green, violet, pink and even red macaroons without overruling legislation.
“We are constantly looking for ways to create products that trigger the imagination of our customers”, says Romaric Boilley, Chef Pâtissier Chocolatier at Délices des Sens in Lyon, France. “With IBC’s Power Flowers™ we get unparalleled convenience and consistent results in coloring. We have been waiting for this revolution for years and IBC has still managed to beat our expectations.”
IBC Belgium (ibcbelgium.com), located in Kortrijk and part of the Barry Callebaut Group, is specialized in color, design, personalization and seasonality solutions for many food applications.
