Werribee, Victoria, Australia, 2014/09/04 - Australian cheese manufacturers, retailers, researchers and students will be treated to a two-day Cheese Seminar and Workshop sponsored by Dairy Australia - DairyAustralia.com.au.
The seminar will be held in Werribee, Victoria on October 22 and 23 and will feature an array of sessions with a French-inspired twist.
Day one of the seminar titled Soft Cheeses The French Connection, will feature French guests and keynote speakers Sebastien Roustel and Eric Spinnler who will discuss topics such as soft cheese manufacture, the prevention of defects, and soft cheese technologies.
While day two titled, Cheeses Milk, Manufacture and Maturation, will see Sebastien and other experts discuss the advances in manufacturing hard cheeses, milk standardization and yields and milk coagulants. One major highlight will be a tasting and grading session by Australian expert, Russell Smith.
Sessions will also cover a diverse range of industry related topics including food safety in the manufacture of cheeses, cheese market trends, and advances in starter cultures and cheese maturation.
Fifteen minute one-on-one sessions with Sebastien or Eric are also available with prior bookings essential.
Sebastien Roustel, a dairy industry Director of Research and Development (R&D), has a wealth of cheese technology experience ranging across fresh, cream, process and soft cheese, to semi-hard (gouda, raclette) and hard cheese (emmental) technology.
During his two-week stay in Australia, Sebastien will also visit dairy factories, feature as an international judge for the 2014 Australian Grand Dairy Awards and run practical cheese workshops and webinars with the National Centre for Dairy Education Australia (NCDEA).
Eric Spinnler, a Professor of Food Science and Technology, has over 25 years of cheese making experience. A Deputy Director at the Paris Institute of Technology for Life, Food and Environmental Sciences, Spinnler was international judge at the Australian Grand Dairy Awards in 2012 and is in Australia on a six-month sabbatical placement.
Dairy Australia program manager Dr Mani Iyer, said that the international visits are important to ensure that Australia’s dairy manufacturing workforce is informed of global developments, helping the industry to remain competitive, sustainable and innovative.

The two-day Cheese Seminar and Workshop is sponsored by Dairy Australia and is jointly organised by Dairy Innovation Australia Ltd (DIAL), NCDEA and Dairy Australia.
Registration is essential for attendance; the cost of registration is $50 for a single day or $80 for two days, which is subsidised by Dairy Australia under its ‘Upskilling Workforce Using Global Networking’ initiative.
