With its “Growing Great Chocolate” programme two years ago Callebaut opted resolutely to fully support sustainably grown cocoa with every of its Finest Belgian Chocolate recipes. Furthermore Callebaut is one of the few chocolate manufacturers to blend, roast and grind the beans entirely in Belgium: “Made in Belgium” from bean to chocolate. The Planet Plantation Dessert
In tribute to sustainable cocoa and to the cocoa plantations in Brazil, Callebaut Chef Patrick Aubrion and Callebaut Ambassador Annemie Van Trimpont have created the Planet Plantation dessert. A wonderfully refreshing summer dessert for “the people of tomorrow.” And it’s an eye-catcher: the dessert looks like a miniature cocoa plantation, with a young seedling growing in a tasty mound of peat. A fresh crémeux of passion fruit and bergamot is enriched with a mousse of Callebaut chocolate and a crocant crumble of cocoa and chocolate. A young fresh shoot of East Indian Cress grown by Le Monde des Mille Couleurs (Dikkebus Ieper) on a bed of bio-earth and cocoa beans is planted in the dessert, giving it a very surprising touch. Finally the young plant is “watered” with fresh apple and cucumber juice.
Planet Plantation is served for the price of 3 Food & Drink tickets in the Callebaut Belgian Chocolate Experience on the festival site, an “experience stand” where Callebaut tells the story from bean to chocolate.
Plant your own cocoa tree
“Wouldn’t it be great if the People of Tomorrow could also personally contribute to the great cocoa of tomorrow”, Callebaut was thinking. That’s how the Belgian chocolate maker gives all visitors to Tomorrowland the chance to plant their own cocoa tree in the Ouro Verde plantation in Brazil. In addition to the contribution by the visitors (1 Food & Drink ticket) Callebaut will provide the extras needed for each cocoa tree that is planted, nurturing it during the first three years until it is fully grown and can start to bear fruit.
Ouro Verde: where the ocean meets the clouds
At Ouro Verde in Bahia, wonderful cocoa is grown by a cooperative of several hundred farmers. The plantations are located in an area of extensive jungle including protected “virgin forest” boasting the richest fauna and flora in the world. The Ouro Verde plantation workers care for the biodiversity in the area, and also plant new forest, having already replanted whole parts of the former Atlantic forest. With this initiative Callebaut seeks to thank the cocoa growers for their efforts, while Tomorrowland visitors for their part can contribute to the cocoa of tomorrow.
