Customers seem to agree and are consuming farmed caviars from Russia, Italy, Germany and the USA. “We carry Osetra from Europe, White Sturgeon Roe from the United States and am looking into to the latest introduction of Russian farmed Beluga” said, Polhemus. The caviar market is definitely evolving as consumers look to continue the consumption of their favorite roe while supporting a common environmental cause.
When you really evaluate the quality, value and price benefits farmed caviars offer a better balance and more importantly; potential growth in somewhat of an aging market. “New consumers may be willing to buy caviar if it is offered at less than $200 an ounce. As more farms move into the production stage we should see more caviar, better harvests and more than likely an overall price decline” said, Marshall Zeigler – TASTE’s, VP of Sales
TASTE claims there is no shortage of opportunity selling caviar throughout Las Vegas. Education remains the biggest hurdle top chefs have all agreed that there have been tremendous improvements in farmed caviars over the last five years, but some still favor Caspian product and have the clientele that will pay for it.
